Ingredients:

  • 1 Tbsp. jerk seasoning
  • 1 can (14 oz.) coconut milk

Instructions:

  1. Preheat your oven to 375°F.
  2. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes. Remove the chicken from the skillet and set it aside.
  3. Add the bell peppers and onion to the skillet, and cook until softened, about 5 minutes. Add the garlic and jerk seasoning, and cook for another minute.
