Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 jalapeño pepper, seeded and minced
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon ground cumin
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1/4 teaspoon cayenne pepper
- 4 cups chicken broth
- 2 cans (15 ounces each) great northern beans, drained and rinsed
- 1 can (4 ounces) chopped green chilies, drained
- 1/2 cup sour cream
- 1/2 cup chopped fresh cilantro
- Salt and pepper, to taste
Instructions:
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and jalapeño pepper and cook for an additional minute.
- Add the chicken to the pot and cook until browned on all sides, about 5 minutes. Add the cumin, chili powder, oregano, and cayenne pepper and stir to coat the chicken.
- Pour in the chicken broth, stirring to scrape up any browned bits from the bottom of the pot. Add the great northern beans and chopped green chilies and bring to a simmer.
- Cover the pot and simmer for 30 minutes, stirring occasionally.
- Remove the pot from the heat and stir in the sour cream and cilantro. Season with salt and pepper to taste.
- Ladle the chili into bowls and serve hot.
Tips:
- If you prefer a thicker chili, you can mash some of the great northern beans with a fork before adding them to the pot.
- This chili can be made in advance and reheated on the stovetop or in the microwave. It also freezes well.
- For a spicier chili, leave the seeds in the jalapeño pepper or add additional cayenne pepper.
- Garnish each bowl of chili with additional cilantro, shredded cheese, or a dollop of sour cream, if desired.
